Chicken Souvlaki with Tzatziki Sauce

Ingredients

  1. 2 pounds boned, skinned chicken breasts, cut into 1 1/2-in. cubes
  2. 1/4 cup olive oil , 1/4 cup dry white wine
  3. 2 tablespoons lemon juice , 2 teaspoons chopped fresh oregano leaves
  4. 4 garlic cloves (2 crushed, 2 minced)  and 1 teaspoon kosher salt
  5. 1/2 teaspoon pepper, divided  and  1/2 English cucumber, coarsely shredded
  6. 14 ounces non fat Greek yogurt and  2 teaspoons distilled white vinegar

Preparation

  1. Heat grill to high (450° to 550°). Mix chicken, oil, wine, lemon juice, oregano, crushed garlic cloves, salt,and 1/4 tsp. pepper in a bowl. Thread chicken onto 8 metal skewers.
  2. Grill chicken, turning occasionally, until grill marks appear and meat is cooked through, 10 to 12 minutes.
  3. Put cucumber in a kitchen towel and wring out any excess liquid. Transfer to a medium bowl. Add yogurt, minced garlic, remaining 1/4 tsp. pepper, and the vinegar and mix until combined. Serve with chicken and warm pita bread.

WATER  MELON JUICE

Ingredients

  1. Watermelon,chopped      4 cups
  2. Sugar                            As needed
  3. Rose syrup                    1 & 1/2 tblsp

Method

  1. Separate the pulp of the watermelon from its rind and chop it roughly. Place it in a blender and blend smoothly.
  2. Use a metal strainer to remove any seeds. Mix 1 & 1/2 to 2 tblsp of rose syrup or as needed with the watermelon juice and mix well.
  3. Adjust sugar and rose syrup quantities according to your taste preferences. Do not add more rose syrup otherwise it will be over powering the juice.
  4. Strain through a fine sieve into a serving jug. Add mint and ice cubes and stir to combine. Serve immediately.
