Crispy Vegetables
Ingrediants:
- Onion
- Capsicum
- Cauliflower
- Potato
- Mushroom
- Babycorn
- Cabbage
Method:
Make a thick batter with 2tblsp maida, 4tblsp cornflour, 1tblsp vinegar,1tblsp chilli sauce,1\2tsp ajinomotto,salt and 1tblsp oil. Dip vegetables in a batter and deep fry.Serve hot.
Mein Chow Soup
Ingredients:
- 4 1/2 cups clear vegetable stock or water
- 2 tbsp finely chopped tomatoes
- 2 tbsp finely chopped capsicum
- 2 tbsp finely chopped cauliflower
- 2 tbsp finely chopped carrots
- 2 tbsp finely chopped cabbage
- 1 tbsp fresh mint leaves (phudina) , finely chopped
- 1 tbsp chopped coriander (dhania)
- 2 tsp finely chopped garlic (lehsun)
- 2 tsp chopped ginger (adrak)
- 3 tsp soy sauce
- 2 tbsp cornflour mixed in 1/2 cup water
- 1 tbsp oil
- Salt to taste
Method:
1. Heat the oil in a kadhai over a high flame. Add the garlic, ginger, vegetables and stir-fry for 2 to 3 minutes over a high flame.
2. Add the stock, mint, coriander, soya sauce, salt and pepper.
3. Add the cornflour paste to the soup and boil for 1 minute. Top with the chilli oil and coriander.
4. Serve hot with soy sauce.
